Enticing red berry aromas lead to flavours of ripe blackberries, cherries and plums with a long lingering finish. A complex wine with integrated oak and velvety tannins complete an experience of rare pleasure.
Nobilo Icon wines represent the culmination of years of research into specific viticultural techniques, particular attention to vineyard sites, and a winemaking strategy focused on fruit structure and balance.
The fruit for this wine was sourced from Southern Wairau Valleys, predominantly in the Waihopai Valley, an area renowned for its large diurnal difference with hot days and cool nights. The hot days allow the grapes to ripen fully and the cool nights help to keep acid structure to add intensity of flavour and well-balanced tannin structure to the wine. The eleven-year-old vineyards are planted on alluvial soils over a clay base resulting in an even ripening throughout the vineyard that delivers an excellent intensity of flavour and colour, which deepens each year of maturity.
A cool summer delayed the harvest for approximately three weeks, giving time for the flavours to develop without the sugar levels ripening to excessive levels while retaining acidity levels in the grapes. The grapes were harvested and destemmed without crushing. This allows for a portion of whole berries in the ferment that provide the wine with a fresh-berry fruit lift, creating a fruit-driven and more complex wine.
The grapes were cold soaked for five days to promote extraction of colour and flavour without harsh tannins, then fermented on their skins for 10 days.
A mixture of wild and cultured yeast strains were used to enhance complexity and mouthfeel. The wine underwent 100% malolactic fermentation, and was 100% barrel matured, 25% in new French oak and the balance in French barrels (1-2 years of age). After 12 months aging in barrel, the wine was blended and filtered.
The wine was bottled in March 2013.
COLOUR: Dark red.
AROMA: Rich aromas of berry fruits, spice, and hints of dark chocolate.
PALATE: Flavours of dark berry fruits such as cherry, black currant, and blackberry with cocoa and spicy oak undertones. The tannins are soft and well rounded; the palate is well structured and balanced with excellent length.
FOOD PAIRING: Perfect with mustard & herb-crusted rack of lamb or char-grilled tuna.
