Rock Oysters

Pairs well with Sauvignon Blanc

Nobilo Marlborough Sauvignon Blanc and oysters are one of the true marriages made in heaven! The crisp citrusy flavours found in the Nobilo Marlborough Sauvignon Blanc work superbly with lightly salty minerality of the oysters.


Natural Pacific Rock Oysters with lemon


  • 12 Rock Oysters
  • Rock Salt
  • Lemon
Tempura Oysters
  • 12 Rock Oysters
  • tempura batter
  • 50g corn flour
  • 40g plain flour
  • 100ml iced water
  • 100ml lemon juice
Soy & Sesame dressing
  • 1 tbsp sesame oil
  • 1 tbsp light soy sauce
  • 2 tsps wasabi paste
  • 1 tbsp hot water
  • 80ml extra virgin olive oil
Oysters shooter mix
  • 12 Rock Oysters
  • 2 egg whites
  • Juice of 1 lemon
  • 15ml lemon vodka


  1. Freshly shuck the oysters and carefully cut the oyster free from the shell.
  2. Remove any broken shell, check the oyster is clean.
  3. Be careful not to lose any of the natural juices.
  4. Serve 12 oysters on a bed of rock salt with lemon halves wrapped in cheese cloth.
Tempura Oysters with Soy & Sesame dressing
  1. Sieve the flours into a bowl, whisk in the water and lemon juice, add a pinch of salt, it should be smooth and free of lumps. Keep in the refrigerator.
  2. Dip 12 oysters into flour then into tempura batter and deep fry until crisp.
  3. Drain on paper towels then place back into clean oyster shells.
  4. Serve with soy & sesame dressing on the side.
To serve
  1. Arrange two of each oyster on plates and serve with tempura oysters hot crisp from the fryer.
Oyster Shooter mix
  1. Place all ingredients in a jug and foam with a stick blender.
  2. Place 12 oysters in shot glasses then top with a spoonful of foamed shooter mix.
  3. Garnish with 1/8 teaspoon of caviar (you can use Tobiko caviar).
