SEARED SCALLOPS WITH CITRUS VINAIGRETTE

Nobilo Sauvignon Blanc with Seared Scallops with Citrus Vinaigrette, perfect for your summer evenings.
4 thick cut bacon slices
1 ½ lbs large scallops
3 large navel oranges
Juice of 1 lemon
2 Tbsp chopped chives
Salt and pepper
In a large frying pan cook the bacon until crispy.
Drain, reserving fat.
Crumble bacon roughly.
Peel and segment oranges, reserving and juices.
Season scallops with salt and pepper.
In a large frying pan heat bacon fat over med-hi heat.
Sear scallops, around 45-60 seconds per side.
Remove pan from heat and add lemon juice, mix well.
Remove scallops from pan and add orange juice, scraping bottom of pan.
Plate scallops with orange segments and bacon.
Dress with pan juices.
Garnish with chives and serve.
